For the Base
- 1/2 cup rolled oats
- 1 ripe banana, mashed (or 1/3 cup applesauce or yogurt)
- 1 large egg (or flax egg, but will be less fluffy)
- 1 tablespoon coconut sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- pinch of salt Mix-Ins (optional)
- peanut butter, blueberries, cinnamon and/or chocolate chips Toppings (optional)
- fruit, maple syrup, chocolate chips, or yogurt
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Combine all of the base ingredients in a high-powered blender or food processor. Blend for 15 to 30 seconds. If adding any mix-ins, stir them in after blending.
- Step 2: Pour the batter into a small oven-proof baking dish, such as 1 (4 to 5 inch) ramekin(s). Bake for 22 to 25 minutes, or until the top is firm to the touch.
- Serve: Add toppings, grab a spoon, and enjoy warm.
Recipe Notes
Chocolate Version: Follow the recipe as indicated but reduce the oats by 2 tablespoons and add 1 tablespoon of cocoa powder.
