Curry Roasted Cauliflower

An easy roasted cauliflower recipe seasoned with curry powder, olive oil, and cilantro. An easy, 1-pan vegetable side dish.

- 1/2 large head cauliflower (about 1 pound)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon curry powder
- 1/2 teaspoon black mustard seeds (optional)
- salt and pepper, to taste
- fresh cilantro leaves and stems, for serving
Instructions
- Step 1: Preheat the oven to 420 degrees Fahrenheit.
- Step 2: Cut the cauliflower into roughly 1½ inch pieces (like the size of a thumb). The pieces will shrink while cooking, so avoid cutting them too small. Both the florets and the center pieces can be used.
- Step 3: Toss the cauliflower with the olive oil, curry powder and mustard seeds until well coated. Season generously with salt and spread the seasoned cauliflower in a single layer on a baking sheet. Roast for 20 to 25 minutes, or until tender and well browned. Stir the cauliflower halfway through the cooking time.
- Serve: Top with fresh cilantro and enjoy. This is also tasty with a few golden raisins thrown in after baking.
