Crispy Bean and Cheese Tacos

Crispy Bean and Cheese Tacos that are so easy to make! Stuffed with refried beans and melty cheese, then baked (not fried) until crunchy. Serve with a simple salad for a great meal.

For the Tacos
- 8 10 taco-sized corn tortillas
- 1 (15 ounce) can refried beans
- taco seasoning, to taste
- shredded mozzarella cheese, to taste (dairy or non-dairy)
- avocado oil, to taste For Topping
- sour cream (dairy or non-dairy), cilantro, and hot sauce
Instructions
- Step 1: Warm the refried beans in a small pot until loose, about 2 minutes. Season to taste with taco seasoning and salt. Set aside.
- Step 2: Preheat the oven to 425 degrees Fahrenheit. Warm the tortillas in a microwave (or oven) for a minute, until they are pliable.
- Step 3: Place the warm tortillas on a baking sheet and coat the tortillas generously in avocado oil on both sides.
- Step 4: Spoon some of the refried beans over half of each tortilla. Top with a sprinkling of cheese (try not to overstuff them) and fold the tortillas in half. Repeat with all the remaining tortillas. Tip: If your tortillas aren't staying closed, it can help to use a tiny dollop of refried beans over the cheese to use a 'glue' for the tortilla.
- Step 5: Bake the tacos for 8 minutes, then flip and bake for another 8 minutes. They will be ready when they are golden brown and crispy.
- Serve: Top with sour cream, cilantro, and hot sauce. Enjoy immediately for the best crunch.
