For the Pasta
- 12 ounces pasta (such as penne or farfalle) For the Sauce
- 33333333/100000000 cup runny tahini (we use this one)
- 1 medium tomato
- 1/4 cup oil-packed sun-dried tomatoes
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder (optional)
Instructions
- Step 1: Cook the pasta according to package directions. Before draining, reserve a mugful of the pasta water.
- Step 2: Meanwhile, blend the tahini, tomato, sun-dried tomatoes (including some of the oil), water, salt, and optional garlic powder with an immersion blender (or small standing blender) until smooth. It should make about 1 cup of sauce.
- Step 3: Toss the drained pasta with the sauce and a generous splash of the pasta water until super creamy (we use about 1/2 cup of water). Season with salt and pepper.
- Serve: Enjoy! This sauce will thicken once cooled, so just add a splash of water to loosen if needed.
