A Crab Cobb Salad recipe that loaded with fresh crabmeat, feta, and avocado with a simple lemony dressing. Easy and summery!

For the Salad
- 6 to 8 ounces lump crab meat (Note 1)
- 1 head romaine, washed and chopped (about 6 handfuls)
- 2 roma tomatoes, sliced
- 2 avocados, diced
- 3 ounces feta cheese
- red onion, to taste
- capers, to taste For the Dressing
- 6 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 1/4 teaspoon dried dill (optional)
- salt and pepper, to taste
Instructions
- Step 1: Combine all dressing ingredients in a small bowl or jar. Set aside.
- Step 2: Rinse, dry, and chop the romaine. Spread the romaine over a large serve plate or bowl. Top it with the crab, tomatoes, avocado, feta, and red onion. Sprinkle the capers over the top.
- Serve: Drizzle with the dressing and enjoy.
Recipe Notes
Note 1: As a budget-friendly alternative to crab, substitute by dicing an equivalent amount of pre-cooked shrimp.
