The best Cilantro Pesto recipe! A tangy and vibrant pesto made with fresh cilantro, almonds, olive oil, and a hint of balsamic for sweetness. Makes an epic dipping sauce for chicken, fish, or tofu.

Shopping List
- 1 cup cilantro, packed (leaves only)
- 1/4 cup extra virgin olive oil
- 1/4 cup slivered almonds
- 1 tablespoon balsamic vinegar
- 1/2 garlic clove, chopped
- 1/4 teaspoon salt
Instructions
- Step 1: Combine the cilantro, olive oil, almonds, vinegar, garlic, and salt in a small blender or use an immersion blender (we like this one) with a wide-mouth mason jar. Blend until it looks like a chunky pesto with small nut fragments. Add an additional spoonful of water only if needed to loosen. It should be quite a thick pesto.
- Serve: Enjoy in Asparagus and Squash Salad or smeared over fish.
