Chocolate Raspberry Bliss Balls

Chewy chocolate bliss balls made with dates, almond butter, and freeze-dried berries. Perfect for a sweet, easy, and healthy treat.

For the Balls
- 6 large pitted medjool dates (Note 1)
- 1/4 cup smooth almond butter
- 1/4 cup cacao powder
- 2 tablespoons freeze-dried raspberries or strawberries
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt For Topping
- 2 tablespoons unsweetened shredded coconut
- 1 tablespoon freeze-dried raspberries or strawberries
Instructions
- Step 1: Place the topping ingredients in a food processor and pulse until it blends into a fine pink powder. Transfer to a bowl.
- Step 2: Combine all of the remaining ball ingredients in the food processor and blend until the dates are well broken down. The thick dough should hold together when squeezed between your fingers. Add another date if needed for additional stickiness.
- Step 3: Transfer the dough to a cutting board and roll it into small, ping-pong sized balls with your hands.
- Step 4: Roll the balls in the coconut topping. Store in the freezer.
- Serve: Place the frozen bliss balls on the counter for 5 minutes before eating to soften. Enjoy.
Recipe Notes
Note 1: If your dates seem hard and brittle, try replacing them with fresher juicy dates.
