Chocolate Peanut Butter Bliss Balls

Super chocolatey no-baked bliss balls stuffed with a creamy peanut butter surprise. Chewy, delicious, and easy to make.

- 6 large medjool dates, pitted
- 1/4 cup cocoa powder
- 1/4 cup + 8 teaspoons peanut butter or sunflower butter (divided)
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- Step 1: Measure out 8 separate teaspoons of peanut butter and place on a sheet of parchment paper with space in between each. Freeze until firm, at least 15 minutes to overnight.
- Step 2: Combine the pitted dates, cocoa powder, .25 cup peanut butter, maple syrup, vanilla extract, and salt in a food processor. Blend until everything is broken down into a fine crumble, about 30 to 60 seconds. The dough should stick together when pressed with your fingertips.
- Step 3: Transfer the dough to a cutting board and divide into 8 balls. Take one of the balls and divide it in half, pressing each half into a flat pancake shape. Remove one of the frozen peanut butter pieces from the freezer and quickly roll it into a ball. Place the ball in the center of one of the chocolate 'pancakes'. Place the other 'pancake' over the peanut butter ball, sandwiching it inside. Working quickly, roll the dough sandwich into a ball with the peanut butter ball inside. Don't worry if it doesn't come out perfectly well, it will still taste delicious even if it's messy.
- Step 4: Continue this process with all of the remaining dough and peanut butter balls. Note: Keep the peanut butter balls in the freezer until the last moment needed to prevent melting in your warm hands.
- Serve: Store all of the rolled chocolate peanut butter balls in the freezer until ready to eat. Enjoy!
