Chocolate Chickpea Flour Cookies

Tall and puffy vegan chocolate cookies loaded with chocolate chunks. The secret ingredient is chickpea flour, which gives a nice dense-but-soft mouthfeel in every bite. Chocolate orange flavor option in the notes below.

- 1 cup chickpea flour (also known as garbanzo flour)
- 1/2 cup chocolate chunks or chips
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/4 cup water
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla
- 1/8 teaspoon salt
Instructions
- Step 2: Combine all of the ingredients, except the chocolate chunks, in a mixing bowl. It will make a thick dough ball. Refrigerate for 10 minutes (this will make the cookies tall and puffy).
- Step 2: Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Step 3: Roll the chilled dough into 6 large cookie balls. Press down the cookies slightly, keeping them about 1 inch tall. Top generously with the chocolate chunks, pressing them in lightly. Bake for 10 minutes. Remove from the oven, let cool slightly, and then carefully transfer to a cooling rack.

Recipe Notes
Chocolate-Orange Flavor Variation: Replace the water with orange juice and add the zest of 1 orange(s). Alternatively, add 3/4 teaspoon of orange extract to the batter.
