No tuna needed in this delicious chickpea salad sandwich. Made with simple ingredients like chickpeas, celery, red onion, lemon, mayonnaise, and mustard. Mash it all together, pile it over fluffy bread, and you have yourself an epic plant-based sandwich.

Shopping List
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/4 cup celery, finely chopped
- 1/4 cup red onion or shallot, finely chopped
- 2 tablespoons mayonnaise (Note 1)
- 2 tablespoons capers or chopped pickles
- 1 1/2 tablespoons lemon juice (reduce to 1 tablespoon for less tart)
- 1 teaspoon dijon mustard
- 1/4 teaspoon all-purpose seasoning (such as Old Bay)
- salt and pepper, to taste
Instructions
- Step 1: Combine all ingredients in a mixing bowl and use a fork or potato masher to break down the chickpeas into a chunky mash. Taste and adjust seasonings as desired.
- Serve: This chickpea salad is epic on toasted Gluten-Free Oat Bread or salad greens.
Recipe Notes
Note 1: If you prefer not to use mayonnaise, try substituting with 1.5 tablespoons of tahini mixed with .5 tablespoon of water.
