Chicken Sausage and Sweet Potato Meal Prep

An easy and healthy meal prep with roasted veg, sweet potato, chicken sausage, greens, and avocado. Mix-and-match your favorite combo!

For the Bowl
- 2 pounds sweet potato of choice (or parsnips)
- 1 pound broccolini (or asparagus, green beans, or sliced bell pepper)
- 4 chicken sausages (or plant-based sausage)
- 4 tablespoons olive oil
- 4 handfuls spring mix or spinach
- salt and pepper, to taste Topping Ideas
- avocado, sauerkraut, and/or cucumber (optional)
Instructions
- Step 1: Preheat the oven to 420 degrees Fahrenheit.
- Step 2: Chop the sweet potatoes into bite-sized pieces (peeling optional). Toss with 2 tablespoons of the olive oil and season generously with salt and pepper. Spread on a baking sheet and roast for 15 minutes.
- Step 3: Meanwhile, cut any thick broccolini stalks in half vertically. Toss the broccolini (or other veg) with the remaining 2 tablespoons of olive oil. Season with salt and pepper.
- Step 4: After the first 15 minutes of roasting time, add the seasoned veg and sliced sausage to the pan with the sweet potatoes and stir. Roast for another 10 minutes, or until the potatoes are fork-tender and sausage is cooked through.
- Serve: Build each bowl with some leafy greens, warm sweet potato, sausage, and veg. Top with avocado and/or sauerkraut and drizzle with olive oil and optional lemon.
