For the Bowls
- 2 boneless skinless chicken breasts
- 6 ounces broccoli or cauliflower florets
- 1 medium sweet potato
- 1 bell pepper, diced
- 2 cups cooked brown rice (or quinoa)
- 1 avocado, sliced
- 1 tablespoon all-purpose seasoning (Note 2)
- olive oil, for cooking For the Tahini Sauce
- 2 tablespoons tahini (Note 1)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 2 tablespoons cold water
- 1 teaspoon maple syrup (optional)
- 1/4 teaspoon salt
Instructions
- Step 1: Preheat the oven to 420 degrees Fahrenheit.
- Step 2: Add the whole chicken breasts to a baking sheet and spray (or rub) on both sides with oil. Coat both sides of the chicken breasts with the seasoning (add some salt if your seasoning is salt-free).
- Step 3: Dice the sweet potato into bite-sized pieces. Toss in a bowl with the broccoli or cauliflower, bell pepper, and 1 tablespoon of olive oil. Season with salt and pepper. Spread the vegetables on the baking sheet with the chicken.
- Step 4: Bake everything for 12 minutes. Remove the broccoli and then flip the chicken and remaining vegetables. Bake for another 8 minutes. The chicken will be ready when the internal cooking temperature reaches 165 degrees Fahrenheit. Note: Extra large chicken breasts may need an additional few minutes.
- Step 5: After roasting, remove the chicken from the baking sheet and place on a plate. Cover lightly with foil and let rest for 5 minutes.
- Step 6: Meanwhile, stir together the Tahini Sauce ingredients.
- Serve: Build your bowls with the warm rice, diced chicken, veggies, avocado, and tahini drizzle.

Note 1: A good tahini can make a world of difference in how this recipe turns out. The texture and flavor depends on the type of sesame seed used, the roast level, and how those seeds are processed. We recommend this one. Note 2: For a homemade seasoning, try combining 1/2 teaspoon garlic powder + 1/2 teaspoon cumin + 1/2 teaspoon coriander + 1/2 teaspoon onion powder + 1/2 teaspoon paprika or cayenne + 1/2 teaspoon salt.
