Chicken and Apple Breakfast Sausage

These taste like those little breakfast sausages in the freezer aisle, but healthier and tastier (and way more affordable). It's simple: mix together ground chicken, dried apples, and a few warming spices. Then pan-cook them until they're golden brown. The dried apple pieces will plump up when heated and a pleasant sweet bite alongside the allspice.

- 1 pound ground chicken thigh (~93% lean)
- 1 ounce dried apples (see notes)
- 1 tablespoon maple syrup (optional)
- 1 teaspoon fresh sage, chopped
- 3/4 teaspoon dried thyme
- 3/4 teaspoon allspice
- 3/4 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Chop the dried apples into tiny 1/4" inch pieces. Place in a large bowl.
- Step 2: Add all the remaining ingredients, except the cooking oil, to the bowl with the apples. Mix everything together until just combined. Shape the mixture into round patties, about 1/2" inch tall.
- Step 3: Heat a lightly oiled skillet over medium-high heat. Once hot, add the sausage patties in a single layer. Do this in batches if needed. Cook the sausages for 2 to 4 minutes, or until golden brown, and then flip. Cook for another 2 minutes on the other side. After 2 minutes, add a small splash of water to the pan and cover the pan with a lid. Let the steam cook the sausages all the way through, about 1 more minute. Cooking times will vary slightly depending on the size of your sausages.
- Step 4: Remove the lid from the pan and transfer the sausages to a plate to cool.
- Serve: Enjoy these for a protein-packed breakfast or as a tasty snack.
Recipe Notes
Many grocery stores, including Trader Joe's, sell dried apple slices. Look for soft dried apples, rather than the harder freeze-dried varieties.
