Chia Yogurt Pudding

The addition of yogurt to chia pudding makes it extra creamy and delicious. This recipe was inspired by the talented Performance Food Chef, Mary Shenouda,who also loves it topped with blueberries and grain-free granola.

Shopping List
  • 1/2 cup unsweetened non-dairy milk
  • 1/2 cup plain non-dairy yogurt (such as coconut yogurt)
  • 2 tablespoons chia seeds
  • 1 tablespoon coconut sugar, maple syrup, or yacon syrup
  • 1 teaspoon vanilla extract
  • granola and fresh fruit, to taste (optional)

Instructions
  1. Step 1: Stir together the chia seeds and milk in a bowl. Let it sit for 10 minutes and then stir it again once the seeds have started to gel. Not thickening? See Note 1.
  2. Step 2: Stir in the remaining yogurt, sugar or maple syrup, and vanilla extract until well combined. Refrigerate for at least 1 hour or overnight.
  3. Serve: Enjoy chilled as is, or top it off with granola and fruit.

Recipe Notes

Note 1: Not thickening? That probably means your chia seeds are no longer fresh (don't worry, it happens). Just buy some new chia seeds and it should work.
