Cheater's Grand Aioli

Grand aïoli (also known as aïoli garni) is a traditional meal from the south of France that's typically made from aïoli sauce, salted cod, hard boiled egg, and boiled vegetables. This is an easier version made with canned tuna or pre-cooked shrimp and an easy mayonnaise aioli-inspired dip.

For the Aioli
- 1/4 cup mayonnaise
- 2 cloves roasted garlic (or 1/2 clove raw garlic, grated)
- 1 teaspoon lemon juice
- 1/4 teaspoon dijon mustard
- pinch of salt and black pepper For The Rest
- 1 (5 ounce) can oil-packed tuna (or pre-cooked shrimp)
- 6 ounces green beans, trimmed
- 2 large carrots, cut in half
- 2 yukon gold potatoes, peeled and cut in half
- 1 small zucchini (optional)
- salt, pepper, and olive oil, to taste
Instructions
- Step 1: Bring a large pot of salted water to a boil over medium-high heat. Add the potatoes, green beans, carrots, and optional zucchini to the pot. Boil the vegetables until fork-tender. This will take about 5 to 10 minutes for the green beans, carrots, and zucchini. The potatoes will take about 15 to 20 minutes depending on their size. Use a pot skimmer to remove the vegetables as they become ready. Set aside to cool in ice water.
- Step 2: Meanwhile, stir together all of the aioli sauce ingredients. Refrigerate until ready to use.
- Serve: Drain the tuna (if using) and flake it onto the plates. Add the warm boiled vegetables and potatoes. Season everything with salt, pepper, and a drizzle of olive oil. Serve with the aioli sauce on the side for dipping. Enjoy.
