These vegan chocolate chip cookies are all about mouthfeel: thick, chewy, and somehow dense and soft at the same time. Every bite has warming notes of cardamom, cloves, and ginger. Adapted from Yvonne's Vegan Kitchen

For the Cookies
- 1 cup + 2 tablespoons garbanzo flour (we like this one)
- 1/2 cup coconut sugar
- 1/2 cup chocolate chips
- 1/4 cup coconut oil, melted
- 2 tablespoons water
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt For the Spice Blend
- 3/4 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
Instructions
- Step 1: Place the water and the spice blend in a small, microwaveable bowl. Stir to combine. Heat the spiced water mixture in a microwave until very warm, about 15 to 30 seconds. Set aside and allow the water blend to steep, it should smell very fragrant. If you prefer not to use a microwave, you can follow the same steps with a small saucepan over medium heat.
- Step 2: In a bowl, mix together the wet ingredients: melted coconut oil, vanilla, and the water blend. In a separate bowl, stir together the garbanzo flour, sugar, baking powder, and salt. Add the dry ingredients to wet ingredients and stir to combine. Fold in the chocolate chips.
- Step 3: Refrigerate the batter for 10 minutes. This will help keep the cookies tall and chewy.
- Step 4: Meanwhile, preheat the oven to 350 degrees Fahrenheit.
- Step 5: Scoop out the chilled batter onto a parchment-lined baking sheet. It should be a very thick batter. Each cookie ball should measure about 3 tablespoons. Press down the cookies slightly, keeping them about 1 inch tall.
- Step 6: Bake the cookies for 10 minutes. Remove from the oven, let cool slightly, and then carefully transfer to a cooling rack.
- Serve: Enjoy these cookies warm (or chilled for an extra chewy bite).

Note 1: If you like your cookies extra spiced, add in an additional 1/2 teaspoon of the spice blend.
