Carrot Fritters with Tzatziki

These crispy and soft homemade carrot fritters are a favorite, especially with a dollop of yogurt sauce on top. If you love the taste of zucchini fritters but don't want the hassle of straining zucchini — this recipe is for you.

For the Fritters
- 1 1/2 pounds carrots, grated
- 1/2 medium red onion
- 1/2 cup garbanzo flour (or all purpose flour)
- 1/4 cup feta or goat cheese
- 1 large egg
- 1 garlic clove, chopped
- 1/2 teaspoon salt, divided
- 2 tablespoons grated parmesan cheese (optional)
- 1 tablespoon EACH fresh parsley and mint, chopped (optional)
- cooking oil, for frying For Serving
- Tzatziki Sauce, to taste
Instructions
- Step 1: Grate the carrots and onion on the large holes of a box grater (or use a food processor with a grating attachment).
- Step 2: Heat a large frying pan with 1/2 tablespoon of olive oil over medium-high heat. Add the grated carrots, onions, and 1/4 teaspoon of the salt. Sauté for 5 minutes, or until the carrots have softened.
- Step 3: Transfer the carrot blend into a mixing bowl and let cool for 10 minutes. Add all of the remaining ingredients to the bowl: flour, cheese, egg, garlic, remaining 1/4 teaspoon salt, optional parmesan, and fresh herbs. Stir to combine until the feta is broken down and everything is evenly incorporated.
- Step 4: Divide the mixture into 10 to 12 equal mounds and use your hands to roll them into balls. They should feel wet, but will just hold together in a ball shape.
- Step 5: Heat a thin layer of cooking oil (we like to use a 50/50 blend of avocado oil and olive oil) over medium-high heat until a drop of water sizzles on contact with the oil. Transfer some of the balls to the hot pan and push down each fritter with a spatula to flatten. Do not overcrowd the pan. Cook the fritters for 2 to 3 minutes on each side or until golden brown. Transfer to a cooling rack and continue frying the remaining fritters. Reduce the heat if the fritters are browning too quickly and add more oil as needed.
- Serve: Enjoy warm with a dollop of Tzatziki Sauce.
