Caramelized Shallot Vinaigrette

An easy and delicious shallot vinaigrette recipe made with olive oil, red wine vinegar, honey, and mustard. Quickly sautéing the shallots in the olive oil releases its sweetness and infuses it into the vinaigrette.

Shopping List
- 6 tablespoons extra-virgin olive oil
- 1 shallot, very finely chopped
- 1 tablespoon honey (or maple syrup)
- 1 tablespoon red wine vinegar
- 2 teaspoons dijon mustard
- salt and black pepper, to taste
Instructions
- Step 1: Heat the olive oil in a small frying pan over medium heat. Add the finely chopped shallot and sauté, stirring often, for 3 to 5 minutes. The shallot should be soft and golden. If the shallot is browning too quickly, turn down the heat.
- Step 2: Stir together the shallot oil, honey, red wine vinegar, mustard, salt, and pepper in a small bowl or jar until smooth. For a creamier dressing option, you can blend the dressing in a small blender.
- Serve: This is great on Pistachio and Apple Salad.
