Candied Orange Quinoa

Candied Orange Quinoa! Fluffy quinoa combined with candied orange peels, almonds, pumpkin seeds, and fresh herbs in a simple honey vinaigrette. Delicious and easy.

Shopping List
- 2 cups cooked quinoa
- 1/2 cup fresh parsley, chopped
- 33333333/100000000 cup candied orange peel, chopped (we use these, Note 1)
- 1/4 cup almonds, chopped
- 1/4 cup pumpkin seeds
- 3 tablespoons shallot, minced
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon honey
- 1/2 teaspoon salt
- black pepper, to taste
Instructions
- Step 1: Cook or defrost the quinoa according to package directions. For reference, 1 cup of dry quinoa makes about 2.5 cups of cooked quinoa.
- Step 2: Whisk together the olive oil, lemon juice, honey, salt, and pepper. Set aside.
- Step 3: Combine all remaining ingredients in a large bowl. Pour in the vinaigrette and toss to combine.
- Serve: Enjoy this quinoa salad warm or chilled. It's a perfect accompaniment to Honey Dijon Chicken Thighs and/or Roasted Root Vegetables with Honey Dijon.
