Cajun Butter Baked Fish

Flakey, perfectly cooked baked cod topped with a cajun spiced buttery sauce. Easy, healthy, and delicious. This is great served over mashed cauliflower. Recipe adapted from Downshiftology.

Shopping List
- 4 (5 ounce) fresh or defrosted cod fillets
- 3 tablespoons butter (dairy or non-dairy)
- 1 teaspoons extra-virgin olive oil
- 4 garlic cloves, minced
- 2 tablespoons parsley, chopped
- 1/4 cup grain-free breadcrumbs or almond meal (Note 1)
- 1 teaspoon cajun seasoning (Note 2)
- salt, to taste
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Mix together the butter, olive oil, garlic, parsley, and cajun seasoning. Season with salt.
- Step 3: Pat the fish dry (especially if using defrosted cod) and place in a baking dish. Smear the seasoned butter evenly over the the tops of the fillets.
- Step 4: Cook the fish for 15 minutes total, or until it flakes easily with a fork. After the first 8 minutes, quickly pull the baking dish out of the oven and sprinkle the top of the fillets with the breadcrumbs. Return to the oven.
- Serve: This is best enjoyed immediately with some of the buttery cooking juices spooned over the cod.
Recipe Notes
Note 1: Just crush your favorite grain-free crackers (we love Simple Mills) in a food processor until finely ground. Note 2: To make a quick cajun blend substitute, try mixing together equal parts paprika and cayenne pepper.
