Broccolini and Bell Pepper Macro Bowl

An easy meal-in-one macro bowl with warm rice, roasted broccolini, chicken sausage, avocado, greens, and crunchy bell pepper. Ready in just 20 minutes and perfect all year round.

Shopping List
- 6 ounces broccolini (or asparagus)
- 6 ounces chicken sausage (or vegan sausage)
- 2 handfuls spring mix or greens of choice
- 1 red bell pepper, diced
- 1 cup cooked brown rice
- 1/2 avocado, diced
- extra-virgin olive oil and lemon juice, for dressing
- salt and pepper, to taste
Instructions
- Step 1: Cook or defrost the rice according to package directions.
- Step 2: Preheat the oven to 400 degrees Fahrenheit. Trim the broccolini and slice any thick stalks in half lengthwise.
- Step 3: Spread the broccolini on a baking sheet and drizzle with olive oil. Season with salt and pepper and roast for 10 minutes, or until fork-tender but still bright green in color. Note: If you're not a fan of raw bell pepper, add it to roast with the broccolini here.
- Step 4: Meanwhile, slice and cook the sausages in a frying pan over medium-high heat for several minutes until browned and cooked throughout.
- Step 5: Divide each bowl with spring mix, warm brown rice, roasted broccolini, raw bell pepper, cooked sausage slices, and avocado.
- Serve: Drizzle with olive oil and optional lemon juice. Season with salt and pepper. Enjoy.
