Boiled Greens (Horta)

Horta is a staple Greek side dish made with a simple combination of leafy greens that are boiled until tender and then drizzled with olive oil. Serve alongside Greek Pea Puree or baked fish with Herb Drizzle Sauce for a delicious Greek-inspired meal.

Shopping List
- 1 bunch mustard greens
- 1 bunch swiss chard (Note 1)
- extra-virgin olive oil, to taste
- lemon slices, for serving
- salt, to taste
Instructions
- Step 1: Bring a large pot of generously salted water to a boil.
- Step 2: Meanwhile, thoroughly rinse the greens to remove any dirt or debris trapped in the leaves. Roughly chop the leaves into large pieces, each piece about the size of a palm. Slice any very wide stalks in half.
- Step 3: Place the chopped greens in the boiling water and cook, covered, for 7 to 10 minutes. The greens will be ready when they're fork tender. Drain the cooked greens, reserving a little bit of the cooking liquid to mix back into the greens to keep them moist.
- Serve: Transfer to a serving plate and drizzle generously with olive oil and a squeeze of lemon juice. Taste and season with salt as needed. Enjoy.
Recipe Notes
Note 1: Any leafy greens can be substituted here such as spinach, romaine, or additional mustard greens.
