Berry and Date Energy Balls

This healthy energy ball recipe delivers delivers a big punch of berry flavor. The base of these bite-sized treats is a blend of sunflower seeds, dates, and soft dried berries. It's then boosted with optional additions of protein powder and highly nutritious camu powder. If you're a true berry lover, the crushed strawberry coating gives for extra tart flavor and eye-popping color.

Energy Ball
- 2 cups dried berries of choice (not freeze-dried)
- 1 3/4 cups sunflower seeds and/or almonds
- 1 cup pitted medjool dates
- 5 tablespoons berry-flavored protein powder (Note 1)
- 2 teaspoons goji berry powder or camu powder (optional)
- 1 teaspoon lemon juice Rolling (Optional)
- 1 (12 ounce) pack freeze-dried strawberries (we use these)
Instructions
- Step 1: If the dates seem dry, soak them in warm water for 30 to 90 minutes until softened.
- Step 2: Combine all ingredients, except the optional freeze-dried berries, in a food processor. Blend until the mixture balls up and the large seed pieces are broken down, about 3 to 5 minutes. Rest the processor and scrape down the sides as needed.
- Step 3: Use your hands to roll the dough into ping-pong sized balls.
- Step 4 (Optional): For the optional coating, crush the freeze-dried strawberries into a powder in the food processor. Transfer the berry powder to a dish. Roll the balls in the berry powder to coat.
- Serve: Enjoy chilled, or directly from frozen for that extra chewy bite.

Note 1: We used Vega Berry Protein in these. The protein powder can also be substituted with any of your favorite non-berry flavored protein powders or an equivalent amount of additional nuts or seeds.
