Beet and Fennel Bliss Balls

Shopping List
- 33333333/100000000 cup roasted and salted cashews (or almonds)
- 2 tablespoons pistachios, shelled
- 7 large pitted medjool dates
- 1 tablespoon beet powder
- 1 1/4 teaspoons fennel pollen
Instructions
- Step 1: Add all ingredients to a food processor and blend until the nuts and dates are broken down into a crumbly consistency. The dough should hold together when pressed between your fingertips. If it does not hold, add in an extra date.
- Step 2: Transfer the dough to a cutting board and roll into small ping-pong sized balls with your hands. Freeze until ready to eat.
- Serve: Soften the bliss balls for a few minutes on the counter before eating. Enjoy.
