Banana Bread Granola

Homemade granola with delicious banana bread flavor. Easy to make and very customizable. Check out the notes below for mix-in ideas.

Shopping List
- 3 cups rolled oats (not quick cooking or steel cut oats)
- 1 cup mix-ins of choice (such as pecans, walnuts, pumpkin seeds, banana chips, and/or dried fruit)
- 1 ripe banana, mashed
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup chocolate chips (optional)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper.
- Step 2: In a mixing bowl, combine the oats, nuts or seeds (if using), mashed banana, coconut oil, syrup, cinnamon, vanilla, and salt. Stir to combine. Note: Do not add any optional dried fruits, banana chips, or chocolate chips at this stage (those will be added after baking).
- Step 3: Spread the granola over the baking sheet. Bake for 23 to 26 minutes, stirring halfway through the baking time.
- Step 4: Transfer the baking sheet to a cooling rack. Sprinkle any dried fruits or banana chips over the granola (if adding chocolate chips, wait until the granola has cooled to avoid melting the chocolate). Let the granola cool to room temperature. Note: For extra clusters, refrigerate the cooled granola directly on the sheet pan for 15 minutes before handling.
- Serve: Store the granola on the counter or in the freezer. Enjoy over yogurt, almond milk, or as a snack on its own.
Recipe Notes
Chocolate Pecan Option: Add 3/4 cup of pecans + 1/4 cup of banana chips + 1/4 cup of chocolate chips. Add the banana chips and chocolate after baking. Walnut Raisin Option: Add 1/2 cup of walnuts + 1/4 cup of golden raisins + 1/4 heaping cup of banana chips. Add the banana chips and raisins after baking.
