Balsamic Caramelized Onion Pizza with Figs

Caramelized onion jam, fresh figs, arugula, and blue cheese over a simple store-bought pizza crust. If you have one, try using a pizza baking tray here to get an even crispier crust. Not fig season? Check out the substitution option with dried figs in the notes below.

For the Pizza
- 1 frozen or fresh pizza crust
- 1 handful arugula
- 33333333/100000000 cup crumbled blue cheese (Note 1)
- 3 large fresh figs, thinly sliced (Note 2)
- 1 tablespoon olive oil
- 1/2 tablespoons balsamic vinegar
- 1/2 teaspoon garlic powder
- salt and black pepper, to taste For the Onion Jam
- 1 onion, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
Instructions
- Step 1: To make the onion jam, heat the 1 tablespoon of oil in a large frying pan over medium-high heat. Add the sliced onion and salt. Cook for 5 minutes, or until the onion begins to soften. Turn the heat down to medium and continue to cook for about 20 minutes, adding a splash of water to the pan as needed to prevent sticking or burning. The onions will be ready when they have caramelized and are golden brown.
- Step 2: Stir 1 tablespoon(s) of balsamic vinegar into the caramelized onions. Cook for a few more seconds and then set the onions aside.
- Step 3: Once the onions are cool enough to handle, transfer to a food processor. Pulse lightly, until the onions are chunky, but not a puree. Set aside.
- Step 4: Heat the oven to the temperature indicated on your pizza crust. If pre-baking is required before adding the toppings, do so now.
- Step 5: Take the pre-baked pizza crust and spread the onion jam evenly over the surface. Leave a 1/2 inch border on the sides. Save any extra onion jam in the fridge for later. Next, scatter about half of the sliced figs evenly over the jam. Crumble the cheese overtop and sprinkle the garlic over everything. Place the pizza back into the oven and bake at the temperature indicated on the package. It will be ready when the cheese has melted, usually about 6 to 8 minutes.
- Step 6: Meanwhile, toss the arugula with remaining figs, 1 tablespoon of olive oil, .5 tablespoon of balsamic, and a little salt and pepper. Set aside.
- Serve: Set the baked pizza on a cutting board. When ready to serve, scatter the dressed arugula salad on top. Slice and enjoy.
Recipe Notes
Note 1: Make this pizza plant-based by using a soft nut-based cheese. We like to use non-dairy Boursin. Note 2: No fresh figs? Substitute with some sliced dried figs instead. However, only add the dried figs after the pizza has baked - right before serving. Baking the dried figs will make them too hard.
