- 1 large, ripe avocado
- 2 persian or cocktail cucumbers
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons radicchio, thinly sliced
- 2 tablespoons red onion, thinly sliced
- 2 packed tablespoons whole parsley leaves
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1/4 teaspoon ground sumac (Note 1)
- 1/8 teaspoon salt
Instructions
- Step 1: Halve the cucumbers and dice into small pieces. Next, dice the avocado into large 1 inch pieces.
- Step 2: Gently fold all of the ingredients together in a mixing bowl, being careful not to smash the avocado pieces. Taste and adjust seasonings as needed.
