Arugula Salad with Goat Cheese and Cranberries

For the Salad
- 4 large handfuls arugula
- 2 oranges, segmented
- 2 ounces goat cheese
- 1/2 cup dried cranberries
- 6 tablespoons sunflower seeds For the Citrus Balsamic
- 33333333/100000000 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 1/2 tablespoons orange juice
- 1 tablespoon honey
- 1/2 tablespoon dijon mustard
- 1 teaspoon orange zest
- 1 garlic clove, minced
- salt and pepper, to taste
Instructions
- Step 1: Stir together the Citrus Balsamic ingredients. Refrigerate.
- Step 2: To segment the oranges, first slice off the top and bottom of each orange with a sharp knife. Prop the orange up on the flat bottom and slice away the rest of the peel with the knife in a downward motion, including the white pith. Next, cut between the membranes to remove the individual orange wedges.
- Step 3: Toss the arugula in a small splash of the prepared vinaigrette. Top with the orange segments, goat cheese, cranberries, and sunflower seeds.
- Serve: Enjoy with extra vinaigrette on the side.
