For the Oats
- 1/2 cup rolled oats (not steel-cut)
- 1/2 cup non-dairy milk
- 1/4 cup non-dairy yogurt
- 1 tablespoon flax meal
- 1/2 teaspoon vanilla extract For the Cinnamon Apples
- 1 small apple of choice, diced
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
Instructions
- Step 1: In a sealable mason jar or bowl, stir together the rolled oats, milk, yogurt, flax, and vanilla until well combined. Set aside.
- Step 2: In a small skillet over medium heat, add the diced apple, maple syrup, cinnamon, and 1/4 cup of water. Stir everything together and bring to a low simmer. Cover the pan with a lid and cook for 5 minutes. Remove the lid and cook for another 3 to 5 minutes, or until the liquid has cooked off.
- Step 3: Pile the warm apples on top of the oats or stir them directly inside. Let everything soak in the fridge for at least 2 hours, or overnight overnight for best results.
- Serve: Grab a spoon and enjoy the overnight oats chilled or slightly warmed.
