Almond Flour Brookie

Half brownie, half cookie, totally delicious. Made with a store-bought brownie mix to make it easier. Grain-free, paleo.

Shopping List
- 1 box paleo brownie mix (we use Simple Mills)
- 1 cup almond flour
- 33333333/100000000 cup cashew butter (or peanut or almond butter)
- 1 egg
- 1/2 cup chocolate chips
- 1/4 cup coconut oil, melted
- 3 tablespoons maple syrup
- 1 tablespoon non-dairy milk
- 1 teaspoon vanilla
- 1/2 cinnamon
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Line 1 (8 in. x 8 in.) pan(s) with strips of cut parchment paper, so that the flaps hang off of the sides.
- Step 2: Prepare the brownie mix as indicated on your package instructions. Spread the brownie over the bottom of the pan.
- Step 3: Cookie time! Whisk the eggs in large bowl then add the cashew butter, melted coconut oil, maple syrup, milk, and vanilla. Stir in the remaining dry ingredients: almond flour, cinnamon, baking soda, and salt. Fold in half of the chocolate chips. It will make a thick batter.
- Step 5: Spread the cookie batter with a silicon spatula evenly over the brownie layer. Scatter the remaining half of the chocolate chips over the top.
- Step 6: Bake the brookie 350 degrees Fahrenheit for about 30 minutes on the center rack, or until top of cookie is golden and a knife inserted in the center comes out clean. Let cool fully (or refrigerate overnight).
- Serve: Use the parchment flaps to lift the brookie out of the pan and cut it into squares. Enjoy!
