Almond Butter and Jelly Mug Cake (Paleo)

A delicious single-serving almond butter and jelly mug cake that's healthy enough to eat for breakfast! Ready in only 2 minutes. Vegan and paleo.

For the Cake
- 1 tablespoons blanched almond flour
- 1 tablespoon maple syrup
- 1 tablespoon smooth almond butter
- 1 tablespoon non-dairy milk
- 1 teaspoon unsweetened apple sauce
- 1/4 teaspoon cinnamon
- 1/16 teaspoon baking soda Toppings
- jelly, mashed berries, and/or additional nut butter
Instructions
- Step 1: Stir together all of the cake ingredients until smooth and then transfer to 1 small (4 inch) microwaveable ramekin(s) or 1 wide microwaveable mug.
- Step 2: Microwave for 60 to 70 seconds, depending on your microwave strength. Remove the cake from the microwave and set on the counter for 60 seconds to finish cooking.
- Serve: Drizzle the cake with jelly and optional extra nut butter. Enjoy directly from the mug.
