Air Fryer Pretzel Chicken Nuggets

Homemade air fried chicken nuggets coated in crunchy crushed pretzel crumbs. Made with lean chicken breast, these chicken nuggets stay (surprisingly) juicy on the inside and wonderfully crispy on the outside.

Shopping List
- 1 extra large boneless skinless chicken breast
- 1 heaping cup pretzels (we use gluten-free)
- 2 tablespoons arrowroot starch
- 1 egg, beaten
- 1/8 teaspoon EACH cayenne pepper, garlic powder, onion powder (optional))
- high-heat cooking oil spray
Instructions
- Step 1: Add the pretzels to a food processor or blender and pulse until it reaches a panko crumb-like consistency. If you don’t have a food processor, place the pretzels in a resealable bag and pound it down until the pretzels reach your desired consistency. Pour the crumbs into a rimmed plate and stir with the optional cayenne, garlic powder, and onion powder.
- Step 2: Dice the chicken into small nugget-sized pieces.
- Step 3: Create an assembly line of the diced chicken, arrowroot starch, beaten egg in a bowl, and the pretzel crumbs. Using tongs or your hands, first coat a chicken piece on all sides in the arrowroot. Then dip the chicken in the egg wash, letting the excess egg drip off before transferring it to the pretzel plate. Cover the chicken on all sides in the crushed pretzels, then transfer to clean plate. Repeat this process with all of the chicken pieces.
- Step 4: Preheat an air fryer to 390°F. Place the chicken pieces in the fryer basket and spray the tops generously with cooking spray. Air fry the nuggets for 8 to 9 minutes. Halfway through the cooking time, use tongs to gently flip over the nuggets so that the side that was facing down is now facing up. Spray with oil again and continue to cook until the time is up. Test the doneness of the chicken by cutting one piece in half and seeing that the juices run clear.
