2-Ingredient Probiotic Dressing

Sauerkraut juice, which is at the center of this dressing, is a gut-healthy probiotic and potential immune booster. In an effort to use more of that nourishing juice, this dressing was born. A sour-tangy taste mellowed by creamy tahini; you can't help but feel your insides are smiling when eating this. Just 2 ingredients and no complicated steps required. Serve this dressing on grains, salads, steamed vegetables, and/or beans.

Shopping List
- 1 cup sauerkraut juice (Note 1)
- 1/2 cup tahini
- salt and pepper, to taste
Instructions
- Step 1: Blend the ingredients with an immersion blender, small food processor, or by hand. Taste and adjust as needed, to reach desired consistency. The brand of tahini will affect how much juice is required.
- Serve: Enjoy. This is especially great drizzled over Macro Bowls.
Recipe Notes
Note 1: We used a beet sauerkraut for these images, which made the dressing slightly purple. Use your favorite brand of sauerkraut, and keep in mind the flavor will alter the taste of the dressing. Note 2: A good tahini can make a world of difference in how this recipe turns out. Look for a tahini that's light in color and very runny. It should taste rich and slightly sweet, not at all abrasive. Our current favorite is this one.
