10-Minute Potato and Egg Skillet

A quick and easy 1-pan breakfast skillet of potatoes, greens, eggs, and bacon or sausage. Using pre-cooked frozen potatoes makes this hearty meal ready in only 10 minutes.

- 2 eggs
- 1 cup frozen roasted potatoes
- 1 large handful kale, hard stems removed
- 1 to 2 pieces of turkey bacon, pork bacon, or breakfast sausage
- cooking oil or butter, to taste
Instructions
- Step 1: Warm a large skillet with a little cooking oil or butter over medium-high heat. Once hot, add the still-frozen potatoes and the kale directly to the pan. Cook for 4 minutes or until the potatoes are beginning to brown on all sides.
- Step 2: Push the potatoes and kale to one side of the pan. In the other side, add another bit of cooking oil or butter and then add the bacon or sausage. Make some more room in the pan and crack in the eggs (or whisk them beforehand to make scrambled eggs). You should have three 'sections' in the pan.
- Step 3: Continue cooking the eggs and bacon or sausage for 2 to 3 more minutes, or until cooked to your liking. For fried eggs, carefully flip them over once the underside is crispy.
- Serve: Slide everything out into a plate and top with your favorite condiments. Enjoy.
