Pretzel-Crusted Chicken Tenders

These baked chicken tenders are nice and crunchy on the outside and juicy on the inside with no frying needed. A simple blend of crushed pretzels and simple seasonings makes a tasty breading that everyone will love. Easily make it gluten-free by using gluten-free pretzels.

- 1 pound chicken breast tenders (Note 1)
- 75 grams pretzels (about 1.75 cups)
- 1 egg, beaten
- 1/4 teaspoon cayenne pepper, optional
- 1/4 teaspoon garlic powder, optional
- 1/4 teaspoon onion powder, optional
- salt, to taste
- high-heat cooking spray (such as avocado oil)
Instructions
- Step 1: Preheat the oven to 410°F. Line a baking sheet with foil or parchment paper.
- Step 2: Place the pretzels and optional seasonings in a food processor and crush until a panko-sized breadcrumb consistency is reached. Transfer the pretzel mix to a wide plate.
- Step 3: Create an assembly line with the beaten egg in a bowl, the pretzel crumb plate, and a clean plate. Dunk each chicken tender in the egg wash, let the excess drip off, and then coat it on all sides in the pretzel mix. Place the finished chicken tenders on the clean plate.
- Step 4: Place the breaded chicken tenders on the lined baking sheet and spray with a little cooking oil. Bake the tenders for 18 to 20 minutes, or until cooked all the way through (exact cooking times will vary depending on the size of the tenders). Flip the chicken over halfway through cooking and spray with all little more oil if needed.
- Serve: Transfer the chicken to a plate and enjoy. These are great with Honey Mustard Dipping Sauce.

Note 1: Prepare chicken tenders yourself by slicing a boneless, skinless chicken breast in half horizontally. Cut each cutlet into 1 to 2 inch strip pieces.
