Magic Miso Dressing

Miso is a traditional Japanese ingredient usually made from fermented soybeans. In this dressing, it lends salty umami flavor to a combination of mirin, rice vinegar, sesame oil, and ginger. Enjoy this creamy miso dressing on salads or soba noodles.

Shopping List
- 2 tablespoons mirin (we use this one)
- 2 tablespoons grapeseed, avocado, or safflower oil
- 2 tablespoons toasted sesame oil
- 1 1/2 tablespoons rice vinegar
- 1 tablespoon sweet white or yellow miso
- 1 tablespoon smooth almond butter or tahini
- 1 tablespoon water
- 1 teaspoon honey or agave syrup
- 1/2 teaspoon packed fresh ginger, grated
- 1/4 teaspoon garlic powder
Instructions
- Step 1: Combine all ingredients in a wide mason jar and use an immersion blender (we like this one) to blend the dressing until it's very smooth. A small standing blender can also be used. This will make approximately 1/2 cup of dressing. Note: Whisking by hand will not fully blend the miso into the dressing.
- Serve: Toss with greens, grains, noodles, and/or your protein of choice. This is amazing in Spring Mix Salad with Scallions and Almonds.
