Salmon
- 2 (6 ounce) salmon fillets
- 1 tablespoon butter
- 1 tablespoon honey
- 1 tablespoon sriracha (we like this one)
- 1/2 tablespoon olive oil or avocado oil
- garlic powder, to taste
- salt, to taste
- chopped cilantro, basil, and/or sesame seeds (optional, for topping)
Instructions
- Step 1: Rub the oil all over the salmon fillets, especially the top. Season the fish with the garlic and salt.
- Step 2: Heat a skillet over medium-high heat until a drop of water on the surface sizzles immediately. Add the salmon, skin side facing up. Cook for 4 to 5 minutes per side. Do not move or fiddle with the fish during this time (that will help give a nice crust). Note: Very thick pieces of salmon will need closer to 5 minutes per side.
- Step 3: Meanwhile, add the butter, honey, and sriracha to a small bowl. Set aside.
- Step 4: Once the salmon has cooked on both sides, remove it from the pan onto a plate.
- Step 5: Quickly wipe the skillet clean and place back over medium-heat. Add the butter, honey, and sriracha to the pan. Cook, stirring regularly, for about 30 seconds. Add the salmon back to the pan into the sauce, skin side facing up. Let cook for 15 seconds, or until slightly caramelized.
- Serve: Transfer the salmon onto serving plates and drizzle with the sauce. Top with optional sesame seeds and/or herbs. Enjoy.
