Grain-Free Wonton Strips (2-Ingredients)

Grain-free cassava tortillas taste uncannily like wonton strips when fried. Gluten-free, only 2 ingredients, and 5 minutes required.

- 2 grain-free cassava tortillas (we use Siete)
- avocado oil or grapeseed oil, for frying
Instructions
- Step 1: Use a knife to cut the tortillas into strip shapes. To do so, first cut long vertical strips down the tortillas. Then cut each strip 3 to 4 times horizontally. Reference the images above for a visual guide.
- Step 2: Pour a thin layer of oil into a dry frying pan. It should be a depth of about 1/8 of an inch. Heat the oil over medium-high heat. It will be ready when a small piece of tortilla placed in the oil sizzles immediately on contact. If the tester piece of tortilla browns too quickly, lower the heat slightly.
- Step 3: Scatter the tortilla strips into the hot oil, in a single layer. Use tongs or a metal slotted spoon to distribute the tortilla triangles so that they aren't overlapping. Fry the strips for 30 seconds to 1 minutes, or until the chips turn golden. They should be firm and no longer pliable. Keep an eye on them, as they can go from golden to burnt very quickly. Use the tongs or slotted spoon to remove the cooked strips from the oil to a paper-towel-lined plate.
- Serve: Store the wonton strips at room temperature in an airtight container. This is epic in Crunchy Mandarin Salad.
