Shopping List
  • 3 eggs
  • 1 1/2 cups chocolate chips (divided)
  • 3/4 cup cane sugar or coconut sugar
  • 5 tablespoons butter (dairy or non-dairy)
  • 1/4 cup cocoa powder
  • 1/4 cup arrowroot starch
  • 1 teaspoon vanilla extract (optional)

Instructions
  1. Step 1: Preheat the oven to 350°F. Line 1 (8 in. x 8 in.) baking dish(es) with parchment paper for easier clean up.
  2. Step 2: In a microwave safe bowl or stovetop, combine 1 cup of the chocolate chips and the butter and melt together until completely smooth. If using a microwave, heat the chocolate mix in 20-second increments and stir regularly to avoid burning.
  3. Step 3: In a separate bowl add the eggs, sugar, cocoa powder, arrowroot, and optional vanilla extract. Stir with a spatula until just combined.
  4. Step 4: Add the cooled melted chocolate to the bowl and stir or whisk well until it looks like a smooth brownie batter. Fold in the remaining 1/2 cup of chocolate chips.
  5. Step 5: Transfer the batter to the lined baking tray and bake for 22 to 25 minutes. These brownies are better slightly undercooked rather than overcooked.
