Flourless Fudge Brownies

- 3 eggs
- 1 1/2 cups chocolate chips (divided)
- 3/4 cup cane sugar or coconut sugar
- 5 tablespoons butter (dairy or non-dairy)
- 1/4 cup cocoa powder
- 1/4 cup arrowroot starch
- 1 teaspoon vanilla extract (optional)
Instructions
- Step 1: Preheat the oven to 350°F. Line 1 (8 in. x 8 in.) baking dish(es) with parchment paper for easier clean up.
- Step 2: In a microwave safe bowl or stovetop, combine 1 cup of the chocolate chips and the butter and melt together until completely smooth. If using a microwave, heat the chocolate mix in 20-second increments and stir regularly to avoid burning.
- Step 3: In a separate bowl add the eggs, sugar, cocoa powder, arrowroot, and optional vanilla extract. Stir with a spatula until just combined.
- Step 4: Add the cooled melted chocolate to the bowl and stir or whisk well until it looks like a smooth brownie batter. Fold in the remaining 1/2 cup of chocolate chips.
- Step 5: Transfer the batter to the lined baking tray and bake for 22 to 25 minutes. These brownies are better slightly undercooked rather than overcooked.
