Chipotle Caesar Salad

Chipotle Caesar Salad! Romaine, crunchy tortilla chips, and chicken drenched in an easy creamy chipotle caesar dressing. So good, and can easily be made vegan.

For the Salad
- 5 ounces romaine, roughly chopped (about 4 handfuls)
- 2 small handfuls crushed tortilla chips (or taco croutons)
- 1 boneless skinless chicken breast (or 1 avocado)
- crumbled cotija cheese, to taste (optional, Note 2)
- taco seasoning (store-bought or homemade), adjust to taste
- avocado oil, for cooking For the Chipotle Caesar
- 1/2 cup caesar dressing (store-bought or vegan homemade)
- 1/2 chipotle pepper in adobo sauce (double for extra spicy)
Instructions
- Step 1: Combine the caesar dressing and chipotle with an immersion blender or small blender until the dressing is super creamy. Refrigerate.
- Step 2: Slice the chicken breast(s) in half horizontally to make 2 cutlets. Rub the chicken on all sides in some oil. Season generously on all sides with taco seasoning. Note: If using the avocado option, skip to Step 4.
- Step 3: Cook the chicken in a lightly-oiled skillet or grill until cooked through, about 3 minutes per side depending on the thickness. Set aside.
- Step 4: Divide the romaine and cheese onto plates and top with tortilla chips (or croutons) and sliced chicken (or avocado).
- Serve: Drizzle with plenty of chipotle caesar. Enjoy!
Recipe Notes
Note 1: No chicken? Substitute with 1 sliced avocado. Note 2: Can't find cotija cheese? Try substituting with feta, parmesan cheese, or vegan parmesan.
