Shopping List
-
For the Chicken
- 1 1/2 to 2 pounds boneless and skinless chicken breast or thigh
- 1/2 cup plain Greek-style yogurt
- 1/2 tablespoon fresh ginger, finely chopped
- 1 teaspoon salt
- 1 teaspoon garam masala
- 1 teaspoon Kashmiri red chili powder (or chili powder)
- 1 garlic clove, finely chopped For the Sauce
- 2 1/2 cups tikka masala sauce (store-bought or homemade)
Instructions
- Step 1: Dice the chicken into bite-sized pieces, about 1 inch large. Stir together all of the chicken marinade ingredients in a bowl until evenly coated. Cover well and refrigerate for at least 2 hours, or overnight for more flavor.
- Step 2: Preheat the oven to broil and line a rimmed baking sheet with foil (the chicken will release juices, so make sure there is a rim). Place the marinated chicken pieces in a single layer on the baking sheet. Broil the chicken for 5 minutes, or until lightly colored on the edges.
- Step 3: Meanwhile, empty the sauce into a pot of large skillet and bring to a low simmer.
- Step 4: Add the semi-cooked chicken to the simmering prepared sauce. Cover and cook until the chicken is fully cooked, about 5 more minutes.
- Serve: Plate the chicken and enjoy with optional rice, naan, and/or chutney. This is also great with cauliflower rice.
