Baked Honey Dijon Chicken

A simple and juicy baked chicken breast recipe marinated in olive oil, mustard, honey, and lemon. The cooking juices make a delicious sauce for drizzling.

- 4 large boneless skinless chicken breasts
- 6 tablespoons olive oil
- 3 tablespoons dijon mustard
- 3 tablespoons honey
- 1 1/2 tablespoons lemon juice
- 1 1/2 teaspoons oregano or herbs de provence
- 2 teaspoons corn starch (optional, for the sauce)
- salt and black pepper, to taste
Instructions
- Step 1: Stir together the olive oil, mustard, honey, and lemon juice, and dried oregano or herbs de provence in a small bowl until smooth. Season with salt and pepper.
- Step 2: Place the chicken breasts in a glass container or sealable bag. Pour the marinade all over the chicken, making sure it is covered. Marinate in the refrigerator for at least 30 minutes to overnight.
- Step 3: Preheat the oven to 375 degrees Fahrenheit. Place the chicken breasts in a baking dish and pour the residual marinade all over the top.
- Step 4: Bake the chicken for 25 to 30 minutes, or until a meat thermometer inserted into the thickest part of the meat reads 160 degrees Fahrenheit. Remove the chicken from the oven and let it rest for several minutes before transferring to a serving plate.
- Step 5: Optional: To make the drippings into a thicker sauce, combine the 2 teaspoons of corn starch with 2 teaspoon of cold water in a small bowl until a slurry is formed. Stir the slurry into the hot pan drippings and stir until it has slightly thickened.
- Serve: Enjoy with the sauce or pan drippings poured over the chicken when serving.
