White Cashew Cheese Sauce

Vegan mozzarella-style cheese sauce ready in under 10 minutes? Oh yes. The premise here is simple: prepare a batch of Soft Cashew Cheese, then add enough warm water to make it into a pourable sauce. Toss into pastas, spread over casseroles, or dollop onto pizza. Avoid using this cheese sauce at high heat temperatures, as it does run the risk of burning. There is no nutritional yeast in this recipe, but go ahead and add a bit if you'd prefer a more robust cheesy flavor.

- 1 cup raw cashews
- 1/2 cup hot water
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 garlic clove
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried oregano
- black pepper, to taste
Instructions
- Step 1: Soak the cashews in water for at least 3 hours, up to overnight. For a speedier alternative, cover the cashews with boiling water and allow to soak in the warm water for 30 minutes. Rinse and drain well before using. Note: We've also prepared this without soaking the cashews with good results. To skip the soaking, you must use a high-powered food processor or blender.
- Step 2: Place all of the ingredients, except the hot water, in a food processor or blender. Blend until a smooth paste is formed, scraping down the sides as needed. There should be no cashew or garlic fragments remaining. This process should take 2 to 3 minutes.
- Step 3: Add most of the hot water to the cashew paste and blend again, until a smooth sauce is formed. Keep adding hot water, 1 tablespoon at a time, as needed to reach your preferred consistency. Keep in mind that this sauce will thicken somewhat once it is refrigerated.
- Serve: Taste and adjust the flavorings as needed. Store the sauce in an airtight container in the refrigerator until ready to use. This is great tossed into pastas, spread over casseroles, or dolloped onto pizza. Avoid using this sauce at high heat temperatures, since it runs the risk of burning.
