Chipotle Salad Dressing

This Chipotle Dressing is velvety and spicy with a hint of tang. Made with canned chipotle peppers, oil, vinegar, honey, garlic, and shallot. That's it. Delicious over salads, tacos, bowls, and eggs.

Shopping List
- 9 tablespoons safflower or grapeseed oil
- 3 tablespoons red wine vinegar
- 2 large chipotle peppers in adobo sauce
- 2 tablespoons honey (or agave syrup for vegan)
- 2 teaspoons fresh shallot or onion, minced
- 2 garlic cloves, minced
- 1/4 teaspoon salt
Instructions
- Step 1: Combine all of the dressing ingredients with a small blender or use a wide-mouthed mason jar with an immersion blender (we like this one). Blend until super smooth.
- Serve: Refrigerate up to 1 week. This is great in Chipotle Sweet Potato Salad and Salmon Fajita Bowls.
