Sautéed Kohlrabi

Sautéed Kohlrabi is an easy, healthy, and delicious vegetable side that's a cross in flavor between tender broccoli stems and turnips. Cooking the kohlrabi brings out its natural sweetness.

- 8 ounces kohlrabi (about 2 medium bulbs)
- 1 tablespoon butter or olive oil
- salt and pepper, to taste
- parsley, for topping (optional)
Instructions
- Step 1: Peel the kohlrabi bulbs and cut into 1/4-inch slices.
- Step 2: Warm the butter or olive oil in a frying pan over medium-high heat. Add the kohlrabi and season with some salt and pepper. Sauté for 10 minutes, stirring every minutes or so.
- Step 3: For a softer kohlrabi, after the 10 minutes, add in 1/4 cup of water to the pan. Cover with a lid for 2 to 3 minutes. Uncover and continue cooking until all of the water cooks off.
- Serve: Top with optional parsley and enjoy.
