Shopping List
  • 1 cup plain Greek yogurt
  • 1/2 english cucumber, peeled
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 scallion, chopped (white and light green parts only)
  • 1 tablespoon lemon juice
  • 1/2 tablespoon EACH chopped fresh dill and mint (or use 1/4 teaspoon EACH dried dill and mint)
  • 1 small garlic clove, finely chopped
  • 1/4 teaspoon salt

Instructions
  1. Step 1: Grate the cucumber on a box grater on the side normally used for grating cheese. Toss the grated cucumber with the 1 teaspoon of salt and transfer it to a fine mesh strainer placed over a bowl. Let the cucumber drain this way for 10 minutes.
  2. Step 2: Place the drained cucumber on a cheesecloth (or paper towels) and gather the edges into a bag. Squeeze tightly to remove as much of the excess water as possible from the cucumber. Skipping this step will yield a too-watery spread.
  3. Step 3: Place the squeeze cucumber in a small bowl and add all of the remaining ingredients. Stir to combine.
  4. Serve: Drizzle with a little olive oil before serving. This will keep for several days in the refrigerator, but drain off any accumulated water and stir before using.
