Chocolate Avocado Pudding

Silky smooth decadent chocolate pudding that melts in your mouth. Ready in under 10 minutes. No one ever believes there's avocado in this, it's just so good!

Shopping List
- 1 ripe avocado
- 1/4 cup unsweetened cacao or cocoa powder
- 2 tablespoons date syrup (Note 1)
- 1 tablespoon maple syrup
- 1 tablespoon smooth nut-butter (Note 2)
- 1 tablespoon coconut oil, melted
- 1 tablespoon water Topping (Optional)
- 1/4 cup fresh raspberries
Instructions
- Step 1: Blend all ingredients, except the optional raspberries, in a food processor until very smooth with no avocado pieces remaining. Scrape down the sides with a spatula as needed.
- Serve: That's it - refrigerate and enjoy! Top with the optional berries before serving.
Recipe Notes
Note 1: Date syrup adds extra depth here. We use this one. In a pinch, you can substitute with an equal amount of maple syrup. Note 2: Any smooth nut or seed butter will work here: almond, sunflower, cashew, hazelnut, pecan, etc. We especially love using the mixed nut butter from Trader Joe's.
