3-Ingredient Banana Pudding! An easy combination of walnuts, dates, and banana that makes a rich and smooth healthy pudding with a crunchy walnut topping.

Pudding
- 2 ripe bananas
- 3 medjool dates, pitted (Note 1)
- 1 cup raw walnuts
- 1/2 teaspoon cinnamon (optional, but recommended)
- 1/2 teaspoon vanilla extract (optional, but recommended) Topping
- 1/2 cup raw walnuts
Instructions
- Step 1: Place the walnut topping in a food processor (we like this one) and pulse until the nuts are finely chopped and resemble a crumble. Avoid over-mixing the nuts into a flour consistency. Remove from the processor and set aside.
- Step 2: Add all pudding ingredients to a food processor and blend until smooth. It should turn a light purple/pink color. A blender will not work for this.
- Step 3: Transfer the pudding to an airtight container of choice and sprinkle with the optional topping. Place in the refrigerator and allow to cool at least 1 hour before serving.
- Serve: Grab a spoon and enjoy. This pudding will discolor slightly after the first day, due the oxidation of the bananas. It will still taste amazing though. Store any leftovers in the refrigerator in an airtight container.
Recipe Notes
Note 1: The dates should feel soft and plump. Try to use fresher dates if they seem on the dry and brittle side.
