Caesar Pasta Salad

Caesar Pasta Salad made with fresh pasta, romaine, celery, chicken or avocado, and plenty of creamy caesar dressing! Perfect for an easy weeknight meal or picnic.

Salad
- 4 ounces dry pasta (such as farfalle or rotini)
- 4 ounces romaine, chopped (about 3 large handfuls)
- 6 ounces cooked chicken (or 1 large avocado)
- 1/2 cup parmesan cheese, shaved (about 1 ounce)
- 1 celery stalk, thinly sliced
- Caesar Dressing, to taste (store-bought or vegan homemade)
- salt and black pepper, to taste
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes. Drain, rinse with cold water, and transfer to a large serving bowl. Toss with some olive oil to reduce sticking.
- Step 2: Meanwhile, wash and chop the romaine. Chop the cooked chicken or avocado into bite-sized pieces. Set aside.
- Step 3: Add the chicken, romaine, celery, and parmesan to the bowl with the cooled pasta. Pour in some of the caesar dressing and toss well to coat everything in the creamy sauce. Season with salt and pepper.
- Serve: Enjoy chilled or at room temperature, with extra dressing on the side.
