Protein Dark Chocolate Cookies

These are not your traditional chewy, soft cookies - but if you're a dark chocolate fan, then you’ll like these cookies. The taste and texture is like a dark chocolate bar, but with an added dose of protein and no artificial sweeteners. A food processor is required for these, as they will not bind into a dough otherwise. From there, shape them into round cookies and enjoy.
How To MakeDiet Type: Plant-based
Shopping List
- 1/2 cup raw cacao powder
- 1/2 cup maple syrup
- 1/2 cup vegan protein powder (Note 1)
- 1/2 cup chocolate chips (optional, but recommended)
Instructions
- Step 1: Preheat the oven to 350°F.
- Step 2: Combine all ingredients in a food processor and pulse until a dough forms. Sorry, but these cookies will not work with hand-mixing. The processor is necessary for them to bind. Keep in mind that all protein powders absorb liquid differently, so you may need to add a little more or a less maple syrup to reach a compact dough consistency.
- Step 3: Form the dough into round cookies (or bars, whatever shape you like) and place on a parchment-lined baking sheet. These cookies will not rise, so make them about 1/3 inch tall. Eyeball it. Bake for 8 to 10 minutes.
- Step 4: Remove the cookies from the oven. They will still be very soft. Allow them to cool fully, placing them in the fridge to harden.
- Serve: Enjoy. I like to warm these up slightly in the microwave, until the chocolate chips are gooey but the inside is still firm.
